Its winter, and here in the Valley it is warm when the sun is shining but as soon as the dark settles in it is Chilly!  We've been craving spicy foods to warm our bellies at night and this recipe has now been a family favorite 3 weeks in a row.

When I was the main chef for our Vegan Meal Delivery I loved recipes with lots of spices and complicated ingredients - but now I'm happiest when I can whip up dinner in 30 min or less and everyone is satisfied.  Life is busy, but food can still be wonderfully nourishing, delicious, and simple.

Super Simple Chili Recipe

All ingredients are found at Trader Joe's (my favorite place!)

  • 1.5 tablespoons extra virgin olive oil
  • 1diced onion
  • 2 tablespoons minced garlic (about 4 med/lg cloves)
  • 1 can (28-oz) diced tomatoes
  • 1 "Beefless" Ground Meat (Vegan)
  • 1 can kidney beans
  • 1 pkg "Soyrizo" (Vegan)
  • 1 cup water
  • 2 teaspoons ground cumin
  • 1/4 teaspoon ground cayenne pepper (for more spice!)

Sides:  Guacamole to top

Directions:

Get out your pot med. size...warm olive oil on med/high heat skillet...add garlic and cook about 1 min...add onion and cook another min...pour in diced tomatoes...add Ground "beef" and "Soyrizo" and stir together to de crumble...rinse and drain beans then add to pot...add water and spice...heat through and simmer about 5 min

That's it!  You can add bell peppers, celery, sweet potato, corn - get creative!  We love to top with guacamole or even break out the black bean chips and dip in
