As Spring turns to Summer and our foods lighten up, I love to prepare some of the traditional festive meals for our family!  These "sliders" are not only healthy since their baked, but full of flavor.  You can make the falafel ahead of time or even freeze some for another day.

Grab a big mixing bowl and your food processor and let's get cooking!

Pre heat oven 375

  • 1 1/4 cup dried chickpeas (or 2 cans chickpeas)
  • 1 cup Gluten free Oats
  • 2 gloves of garlic minced
  • 1 medium onion chopped
  • 1/2 cup fresh cilantro
  • 1/4 cup parsley
  • 1/2 hot pepper seeded (optional)
  • 3 tablespoons of fresh lemon juice
  • teaspoon- onion powder, garlic powder, salt
  • Olive Oil for basting
  • teaspoon of baking powder
  • 2 TBS tahini (my personal favorite)

Direction: Soak your chickpeas for 6-12 hours, in filtered water covering them completely. rinse the chickpeas and combine everything in a food processor, making sure everything is well combined. You can chill your mixture in the fridge before forming burgers. Scoop the mixture into balls flattening them slightly to your desired size.  Brush with olive oil.  bake at 375 for 10 minutes flip them and bake an additional. 10 minutes until golden brown. 10 burgers


Finish these up with your favorite toppings!  I love to make sliders with mini buns, tomato, quacamole and Trader Joe's Tahini Sauce - yum yum
